Do the new Wi-Fi 7 APs support UNII-4 and UNII-5 channels? I remember Wi-Fi 6E APs did not support them. Please let me know if you are aware of any such documentation.

This is country related but most of docs I´ve seeing is mentioned UNII-5, 6, 7 and 8

The U-NII-4 seems to be considered considered by the FCC for unlicensed use and is presently only usable for Dedicated Short Range Communication Service (DSRC).
The U-NII-5, frequency range 5.925–6.425 GHz, is supported by newer WiFi 7 APs like the 9176i: https://www.cisco.com/c/en/us/td/docs/wireless/access_point/cw917x/c9176I/b-hig-cw9176i/overview.html
