I need to find out which VLAN our Guest SSID is using. I was curious if there is a way you can view from within the WLC which VLAN is mapped to the Guest SSID.
Is there a way to do this from the GUI of the WLC?

WLAN > Click on WLAN ID > check which interface is associated here ..
Once you know the interface then go to Controller > Interfaces
Here you will get the VLAn and complete IP info of it.

This is slightly off topic, but I am struggling now with a conceptual problem.
Why would our Guest SSID be on the our management vlan? Isn't that a security risk?

yes it is.
The 'Guest Network' needs to talk to the controller only if you are using the Unifi Guest Portal . Guest network , on its own vlan, can quietly be isolated from all other networks, thanks to few firewall rules which you could implement ....

The Guest SSID is mapped to the management VLAN. However when you login to the Guest WLAN, I am prompted with credentials (presumably from ISE).
So is it safe to assume that the only thing between a guest user and touching our network devices on that same vlan ISE?
It is using mac-filtering as its security policy. Do you have any idea why this would be done this way?
