Is this true? Without the VLANs associated to the WLAN's IP interface how does DHCP happen? How does the system segment internal user traffic from Guest traffic?

Yes its true. When you enabled LAG then all wlans automaticall goes in diabled mode and assigen to management interface.
How does the system segment internal user traffic from Guest traffic?
You hcan use these:
1. Use sepearte hardware (Anchor/foregin case)
If the mobility is up between the foreign and the anchor WLC, then traffic is being tunneled. The tunnel is built between the management interface of both WLC's.
2. Use sepearte subnet
Guest subnet shoul be in DMZ vlans
