Just wanted to get an expert advise on what might be the best practice and distance recommended between the mounting pole and the antennas to avoid RF shadow concerns?

I think you didnt understand my question. I'm interested in knowing if there is an industry best practice or recommended distance between the antennas and the material the access point is being mounted on?

So for example, lets say if it is 2-3 feet from the pole being mounted on, why 2-3 feet?

Get a wireless site survey done because this will determine what kind of antenna can be used.
Each different antenna has different ways to correctly install. There is no "best practices" because there is a large number of APs out in the market.
