We need another call manager subscriber 11.5 on the remote site, but if we will buy a new server the ESXi will be version 8. So does the call manager will work properly on this server, as the guide says cucm 11.5 supports ESXi until 6.7

I don't think, there will be a lot of people having CUCM 11.5 running on ESXi 8 (no current CUCM version is supported on ESXi
Because as you said by yourself, it's not supported, so not many people will have this setup running.
And furthermore, why don't you update the CUCM? it will be End-of-life next may.

I would not recommend you to do that. You need to be on ESXi v 6.7 with the version of CM that you use.
