Hello,
I have 3 SFP modules inserted into a stack of thow 2960x, and only one SFP module is detected, the 2 others are show as unknown.

Your hard coded speed and duplex on the 1 that is working , while your auto negotiating on the ones that are not
Try hard code under interface each side and reseat

sorry missed the auto there in first output its hard to read , if you connect them to switch to switch do they come up to rule out the server side

It appears that if I connect the SFP in the second switch they are recognized, but not in the first switch off the stack.

Looking at the release notes you could be hitting this below , you could try reload if you know the fibre cable is good and no issues with far end servers and the fact the sfp is working fine in 1 switch

1G or 10G in uplink ports of a Catalyst 2960-X stack may not come up after a reload or OIR of SFP/SFP+.
1G or 10G SFP appear as “unknown” in the output of the show int status command.
