When you perform a synch with Active Directory, does it create a mailbox for every person in Active Directory.

No. You must add a mailbox to the user object after the install is complete. Unity will extend the AD Schema though.

Also, as a footnote, Unity is End of Sale. I suggest you begin work on that migration to Unity Connection.

I'm sorry, I'm talking about Unity Connections 8.6.  Why would it extend the Schema.  Isnt it just looking information up in LDAP?
