I hope you are you referring to the Rule updates in the Firesight.
For the VRT roll back, yes its possible. But you would need to create a support case to downgrade a VRT as this needs assistance from Cisco TAC. The steps to perform this are not external also. Thus request you to open a request with the TAC team.
Note: Intrusion policies that were created while the current SRU was installed will be deleted during the rollback.
