You could clone your current zoneset, place your new zones in it, then activate the new (cloned) zoneset when ready.

Did you try assigning any arbitrary port to one of your inactive VSANs (your 10-13)? Perhaps assigning the ports in the port-channel might work. I see from your recent output/post that the port-channel ports are on VSAN 1.
