I have a bunch of Nexus 9k switches that need to be converted from NXOS to ACI mode. I would rather not do it manually so I started wondering if I could use POAP to perform the switch. Since I have never really used it, I thought I would ask the community before I spend a lot of time setting up a lab for it.

Switches running ACI mode do not support POAP.
That aside, I am not personally familiar with the capabilities of POAP. Assuming you get a full range of commands and image initializations on Standalone NXOS with POAP, that makes me think the only pieces you could potentially automate through POAP are:
After that, one would still need to console into the switch while in loader and manually boot into the ACI image:
> boot bootflash:aci-image-name
Maybe someone else with more POAP experience can think of something else?

What about "no boot nxos" then "boot aci bootflash:<aci-image>" then "reload". It works manually so I'd assume it would work using POAP.
