Is there a way to disable the DHCP server on the SRP 500 GUI for VLAN 1 but not for VLAN 100?

You can setup the VLAN to not use the DHCP server settings by going to Interface Setup > LAN setup > VLAN settings, Click on Edit icon for VLAN1 and choose Address Type to be Static or Dynamic IP address (see attached screenshot)
