Hey there fellows.
I have a Cisco Nexus 93108TC-FX Switch in version 7.0(3)I7(3) and I want to upgrade it (finally).
But I'm unable to find the GA. I have tried looking the Software Download Center but there is no GA indication there.
Is there a way to find the GA? or the latest release is the GA?

But it isn't the GA, it was just released last.
It is not the same.
Usually the GA is marked with a star next to the version

I think you mean "General Deployment" version. Here is a brief description about releases:

Here you can find the right version for your device. Pay attention to the Part Number you have. There is also other devices with same architecture.
(To find the version with an STAR, I selected the ACI version.)

I don't see any version that is tagged as "GD"
everything is a M or an F or just numbers

Not all releases have this naming. But in this case, you can continue working on the same M version.
