Is there any way to get a sandbox trial for Meraki Dashboard API with a bunch of dummy data for Wireless Overview?
(e.g. Connection Health, Performance Health, Network Health)

You can get to a sandbox via dCloud:
https://dcloud.cisco.com/

I am not aware of anything that will give you dummy API data.
