Do we have any documentation that details the flow of a Linux based platform authenticating via dot1x via ISE?

Is the flow any different than the Windows or MAC OSX flow?

No difference. Flow is dependent upon the EAP types being used. For most of the EAP types, the endpoint will validate the server's identity prior to sending its identity.
