How to document the network's bandwidth utilization?

I have been assigned to find out the nature of the network's bandwidth utilazation. Is there a way to analyze traffic and breakdown the traffic on the ASA5510?  Any advise is appreciated.

I would suggest you deploy Netflow.

You will need a Netflow collector. I like Manage Engine NFA. It comes with 2 free interfaces.

I provided a static IP for my workstation as the source for collecting NetFlow data.  Where on the Win 7 workstation will the data be found?

You will need a 3rd party Netflow Collector. The link I provided above is a good app that you leave running on a server so you can go back in time and review data. If you want a real-time application check out the free Solarwinds application here-

Will the data captured provide the % of bandwidth contained broadcast, email, voice, video data...? 

Yes it will and it will also tell you who is using those applications and how much bandwidth they are consuming!
