The only way I've found to get info on a specific ip is by capturing the interface and doing a | include.

Without setting up an entirely new Access list is there any way to dump a specific ip adress?

If you create a separate access list specific to the address you are interested in, then capturing that specific address is easy. But if you exclude that possibility of a separate access list then I am not aware of a good way to do it other than your solution of capture the entire interface and use include.
