Is it possible to have wccp redirect any given host to one cache engine for a period of time. For instance if I have a host X and it gets redirected to cache engine Y, I would like it to continue using that cache engine for the duration of its session. Is there a wccp setup that can accomplish this?

I believe that is true presently.
If you have two wccp servers only when one fails the second one takes over and when the failed one comes back online, second one still continues to provide the service.
I filed this ENH request on the IOS side.
I believe it is true on the ASA side as well.

You redirect to a cache engine based on the redirect list. If a packet matches a redirect list it goes to the engine the list is used.
So, you can use a time based ACL for the redirect list. Thus traffic will be matched in the list and forwarded to the engine only for the amount of time the ACL defines, and the rest of the time it will match another redirect list that is used with another engine.
