in order to plan a PIX purchase, I'd like to know what concurrent connections term stand for:
inside to outside
outside to inside
both

The Cisco PIX 535 Firewall, intended for large Enterprise and Service Provider environments, provides over 1 Gbps of firewall throughput with the ability to handle up to 500,000 concurrent connections. The Cisco PIX 501 Firewall, intended for Small Office and Enterprise Teleworker environments supports 7,500 concurrent connections.

Could you plug a 1Gbps feed from a carrier, presented over fibre, into the PIX515 and expect to be able to see throughput over 700 Mbps based on a basic firewall config to reduce overhead ?

Concurrent conections refers to all existing connections that exist through the firewall. This includes inside to outside, outside-inside, or any interface for that matter. (assuming the firewall policy allows that connection).
