We recently purchased a Cison 1841 to separate traffic in our corp office between pc's/printers/etc. and corp application servers. The router came with 2 sets of start guides -

Cisco 1800 Series Integrated Services Router (Modular) Quick Start Guide

and the Cisco Router and Security Device Manager (SDM) Quick Start Guide.

Which one of these guides is the most appropriate to use?

The Cisco 1841 Integrated Services Router is part of the Cisco 1800 Integrated Services Router Series which complements the Integrated Services Router Portfolio.

A Web-based device-management tool that can increase the productivity of network managers, simplify router deployments, and proactively monitor device status is the Cisco Router and Security Device Manager (SDM). Supported on Cisco 830 Series to Cisco 7301 routers, Cisco SDM is shipping on Cisco 1800 Series, Cisco 2800 Series, and Cisco 3800 Series routers pre-installed by the factory.

You can configure your router by using one of the following :

Cisco Router and Security Device ManagerSee the "Cisco Router and Security Device Manager" section

Setup command facilityRefer to the "Initial Configuration Using the Setup Command Facility" section in the Cisco 1800 Series Integrated Services Routers (Modular) Quick Start Guide.

Command-line interface (CLI)Refer to the "Initial Configuration Using Cisco CLIManual Configuration" section in the Cisco 1800 Series Integrated Services Routers (Modular) Quick Start Guide.
