Could someone briefly help me understand the user of IVZs and the difference between IVZ and IVZS.

The concept of the IVZ and IVZS is the same as normal zones and zonesets. In any VSAN you can have multiple zonesets comprised of multiple zones. However, only one zoneset can be active in the VSAN at a time.
It's the same concept if you're doing IVR...you can have many Inter-VSAN zonesets comprised of multiple Inter-VSAN zones, but only one Inter-VSAN zoneset can be active at a time.
Chapter 17 of the MDS Configuration Guide does a good job of explaining terms, etc...
