Is setting the Network Time Protocol disruptive to a Fabric while switch is already setup and running in a live environment?

No, adding NTP to the configuration is not disruptive. The time stamps in the system log might shift if the clock changes as a result of the NTP addition, but that is not disruptive to the switch operation.
