There is a problem with a 5-second drop in Wi-Fi randomly at any time, the strange thing is that it does not happen equally to all, one client may be fine but the other has a 5-second drop.

What would be the optimal thresholds or between what values should the following parameters be, according to the image, so that the client does not have Wi-Fi drop problems:
Number of Policy Errors
Radio Signal Strength Indicator
Signal to Noise Ratio

You may hear different values from others engineers but I consider SNR between 15 up to 35 and RSSI between -60 up to -75 as good condition.
I will take a look on this version and see if there are some known but with similar behavior. .

What I can say is that the signal for this client on that moment was excellent. -64dBm RSSI and most important 34 dB SNR is probably the best condition a client might have.
Whatever is the problem, for sure it is not related to the signal on that moment.
Share the WLC version, this can be a bug, for example. And look the logs, they can show you something.
