my question:
Is it possible to set up two 3550 with HSRP, and to have the HSRP logical address to be the one ip address to communicate to a WCCP cache cluster ?
(I'm aware of this: "This software release supports the connection of only one 3550 switch to multiple cache engines")

the HSRP ip address is never used to send traffic.
So, no, there is no way to do what you want.
Only one of the cat3550 with be able to do wccp.

this was the answer I anticipated. let me refrase the question:
I have a scenario where I have two traffic paths - each path consist of one cat3550 and one cache engine. These are interconnected at L2, but is using HSRP at L3. So, only one 3550 is active on L3 at a given time.
Can I use 2 wccp groups, one 3550 defined with both cache engines in one group and the other 3550 with the same cache engines in another group ?
It will only be one 3550 active on L3 and serving the cache cluster at a given time. when HSRP is failover to the passive 3550, this will start feeding the same cache cluster.
Is this possible ?

how do you achieve the groups ?
There is only 1 instance of wccp running on routers and caches, so I don't know how you can create independent group.
The only solution would be one 3550 with one cache.
Each 3550 will have its own cache.
You could configure HSRP to failover in case the port to the cache is lost [standby track].

It will only be one 3550 generating traffic at a given time.
I know that in the the full blown wccp v2 you can have several routers and cache engines, but does this only go for one cluster ?
