When I look at my traffic summary reporton our CM, 30%  of the traffic is WAFS?  Is this the protocol used to optimize and accelerate, or are these other protocols that are not able to be optimized?

Dan,

By default WAFS = CIFS traffic (TCP port 445 and 139).

See the default classifier list here and search for WAFS.
