is there any datasheet (or any papers) that tells on how many emails per hour or how many users on a certain ESA model can handle?

There is no front facing collateral (data) that speaks to this query.  ESA operation is by message per second and is closely tied to the device size and the services that are enabled.   If you would like to investigate your particular hardware's capabilities contact your Sales Representative.
