Hello George,
It is not possible to recover deleted mail from the Spam Quarantine, as deletion is a final action.
However, it might be possible to recover them if you have archived enabled.
For your ESA in which you deleted the email, please check for Archive being enabled or not, the steps are : ESA GUI -> Mail Policies -> Incoming/Outgoing Mail Policies -> Click on the Antispam Tab -> Under Positively-identified Spam settings Click Advanced -> Archives message (Check if its yes) Similarly in the above path under tab Suspected Spam settings -> Advanced -> Archives message (Check if its yes) the archived messages get stored into the "Anti-Spam Archive" log, which is an mbox-format log file. +Below are the details on how to retrieve the logs for future reference: + For stand-alone appliances these mbox logs can be retrieved directly from GUI. Navigate to the GUI > System Administration > Log Subscriptions and click on the Log Files for the Anti-Spam Archive log type. + For clustered appliances, the mbox logs can be retrieved with the use of FTP/Secure Copy (SCP).
If archive is not enabled, then it will not be possible to recover the deleted message by any means.
Let me know if this is helpful.
Cheers.

It is a tricky question and i think it is not possible to recover one. Because once the data is diminished from servers. Than it is quite difficult to recover one.
