Rule firing conditional on task completion

I'm looking to prevent changes to a set of fields once a task is completed.

I can creat a rule to force it to be read-only when it's not empty, or when the service delivery moment is complete, but both solution have negative consequences.  The former prevents the service provider from working on the case, saving the form, then going back to it and correcting a typo.  The latter solution allows a service provider to go back into that task and change a field later on in the server delivery.

Can you use the Access Control on the AFC to make all those fields viewable only once complete?

Thanks, but Access Control treats Service Delivery as a single moment.
