Is it possible to run a second ACS as a redundancy? I found nothing about this in the documentation.

You may want to take a look at the Replication options under

System Config --> CiscoSecure Database Replication

This will allow the redundant server to be kept in step with the master server.

It is also worth considering the second server not to simply provide redundancy but also to take some of the load.

Yes it is quite possible to run a second ACS and provide redundancy. At a customer site where I work we run two servers with ACS. Our routers and switches attempt to authenticate with one server and if they get no response then they attempt to authenticate with the redundant server. It works very well for us.
