what's the way to check the hardware model the ISE runs on?
I don't seem to find this info on the GUI.

Hello,
You can use the command:
show inventory
But if the appliance is installed on a virtual infrastructure you wont see much.

You will need a VM Licences as well to run ISE on VM

From the GUI, you can find what platform ISE identifies each individual node as from the ISE Counters report found in Operations > Reports > Diagnostics > ISE Counters
This will work for both hardware and VM platforms.
Example from my instance in Azure (this profile equates to the extra small instance type used for Eval):
