Hello all,
I'm getting ready to upgrade a few nodes, a standalone 2.3, and a PAN/Secondary 2.4 to 2.6. That's the plan anyway. My question is will running the URT interrupt the services ISE is providing? Secondly, after running the URT to prepare and to get an estimate of upgrade time, can I then schedule or defer the upgrade to a more convenient time, or does the upgrade just kick itself off after the URT finishes?

The URT should be run on a secondary admin node whenever possible. If it is a standalone deployment, then run it on the standalone node. According to the documentation, it does not require any downtime. The URT will only report on any issues it sees and give you an estimate for the upgrade. You can schedule the actual upgrade for later.
