Hello,
Is there a process or documentation to migrate ISE VM from CentOS to ESXI 7.0.1?

Hi,
This scenario i haven't experienced yes. but you can try using vmware converter to do this job. you need to plan conversion depends on the node count. also keep in mind, that ISE is not recommend to create snapshots or hot VMotion.

options:
1. install ESXi and ISE from scratch, and use the ISE Backup/Restore process.
Note: if you have another Host, you have the option to shutdown the old VM - to keep as a "rollback" - and install the new VM on this new Host.
2. if you have a Standalone Deployment, you have the option to shutdown the Node and take a snapshot.
3. you are able to use a Cold vMotion.

I agree with @Marcelo Morais, but I would advise to go only for option #1 - ISE Backup and Restore. Snapshot or machine copying could be relevant if you were using same platform (e.g. VMware to VMware), but I'm not sure how it would behave with different platforms.
Clean installation of ISE node, followed by restore process should guarantee success with this task.

Speaking of ISE vm migration…If your migrating ISE from VMware to a newer VMware infrastructure, is there a Cisco recommended way of Moving the .vmdk file? And is there to keep anything in mind so that we avoid database corruptions?

a Cold vMotion ... shutdown all Nodes and migrate is a possibility.
