Do we need Java to be installed on MAC OSX device for NSP Provisioning flow for BYOD? Also could anyone share document or reference link for BYOD flow on MAC OS X ?

Nope. For macOS clients, ISE BYOD is using network setup assistant (NSA), a temporal native application.
As of today, only deploying NAC agent (not AnyConnect) at ISE client provisioning portal relies on Java enabled on the client browsers.
The guides below have info for all supported client OS's besides Apple macOS:
