Hello,
I've been asked to upgrade a two node ISE deployment from version 2.7 to 3.2.
The upgrade readiness check passed, but when running a health check I saw the following message
The virtual machine currently have 8 cores and 200 GB disk, which I understand is less than the minimum requirement, but I cannot find any difference between the hardware requirements for version 2.7 and 3.2, so I guess they were able to install ISE 2.7 even though the hardware requirements was not met.
The question is, will the upgrade to 3.2 succeed even though the disks are less then 300 GB or will it fail?

No, the upgrade will fail as you are not meeting the minimum requirements. You will need to build new VMs with the correct resource requirements and use the configuration backup/restore upgrade method.
