I know the wireless controllers support mDNS and can advertise apple and chrome services, however, the problem is trying to make it scalable and secure in a large enterprise healthcare environment (400+ patient rooms).
The goal: Deploy a customer provided chromecast and samsung tablet for each patient room and make sure that only that specific samsung tablet can connect/pair to that specific rooms chromecast device for casting and not a neighboring rooms chromecast. Is there a way to do this with ISE securely? I'm assuming some in the education vertical has probably deployed in a simliar fashion and looking for guidance.
Note: From the wireless side, we wouldn't want a separate AP in each room due to interference and ideally would leverage a separate SSID and connect all the chromecast devices and tablets to that.

Have you thought about a different SGT per unit?
For the chromecast an ldap database could house MAC address and the SGT for a lookup to dynamically assign to the device
Tablet device could have this as well
