HI,
This is probably a long shot, but we need to find when a particular computer using a known IP address was connected to our network. Basically, we think an employee brought a home laptop in and connected to our wireless network. The sys admins found the IP based on the unusual computer name, but we're not sure when exactly it was connected. Any ideas?

You won't see that historical information natively. You'd have to either be sending your devices logs to a central archive and/or using something like User Tracking, part of the larger Cisco Prime LMS pacakge.
That sort of problem is what products like Network Admission Control (NAC) and Identity Services Engine (ISE) are built to prevent and mitigate.
