What all can you do with user defined fields when adding/editing devices. In other words, how are they used.

Typically for reporting and grouping. They give you the ability to provide some additional documentation for your devices like contract ID, contact phone number, support team, etc. You can have up to 10 user-defined fields, and you can name them whatever you want.
