Hello, I am trying to configure an ASA5525 and it's not allowing me to assign an IP address to the interfaces.
These are al the options I get in interface config mode.

Not sure what interface you try to configure here is example config and order of operation in ASA :
Interface Ethernet0/0
nameif outside
security-level 0
ip address x.x.x.x 255.255.x.x

Yes, I'm aware of the configurations but I'm on this G0/0 interface and the configuration options are not there as shown in the screenshot.

Those options seem very odd to be in normal interface config mode. Can you give us the screenshot of going into global config and then into interface config, and then the available options?

A couple of things could cause this. The most common things to check would be:
1. Is your account a level 15 (full admin) user?
2. Is the interface already part of a portchannel interface?
