Ive read through the NAC manual...but still couldnt find my the answer to my question...How does the switch know to route the traffic to the NAC in a L3 environment?

I'm currently evaluating NAC and came across in the quick start guide what I believe is an answer to your question. In Table 1, for OOB Real-IP Gateway type, the configuration step stated using static routes.
In my evaluation, I'm using PBR. I hope this helps.

from the quick start guide, what page is that?...i dont see it on the quick start guide i have...

It's on page 4, but look for the table that describes the different server types.
