Is there a way to add switches and devices not listed in PT, manually?

No, we cannot; only developers at PT could; PT is just a software simulator made to simulate real IOS for purpose of learning at CCNA level. PT is really good tool but it is not real thing and does not behave that way. Not all commands and features are supported in PT; only those for CCNA level exam are.
If you need CLI of cat9000, try DevNet Snadbox; If you need access to real IOS 15, try Cisco Modeling Labs on Devnet, CML has a virtual switch that runs on IOS 15.2. Try it before buying it for free.
details about CML https://developer.cisco.com/docs/modeling-labs/#!faq/reference-platform-and-images-questions
