I have two Nexus 5596 switches and two Nexus 2232 and four Nexus 2248. Can I create VPC configuration for all Nexus 2000 switches ?

Yes, you can create 1 vPC per FEX.
Imagine you have FEX 100, on switch A and switch B
interface x/x
channel-group 100
interface po 100
switchport mode fex-fabric
fex association 100
vpc 100
