We are currently using 2 C2980G-A Switches (1 each in 2 seperate buildings) teamed with a 4000 Series Catalyst switch.
The problem is that we seem to have outgrown our current setup. (I am seeing sniffer utilization spikes of up to 300%)
We would like a recommendation for what model of switch we should upgrade to. We have about a 200-225 node network split fairly evenly between 2 buildings.
Any help would be appreciated.

For a 200-225 node network, the next best bet would be a 4006 (which can go upto 240 10/100 ports, 4003 cannot be used in your case, coz it can go upto only a 96 ports) Since there are 2 buildings, you will have to use 2 of them. linked via fiber.

For around 100 + ports, you have the option of both Cat. 4500 and Cat6000. But if you are looking simple access layer switches, then cat 4500 series would be the best.
Here is the switching literature for ur ref,,
