What is the ramification of removing the IP address from one of my switches?
I have a switch that I don't want to do any out of band management with. All management will be with a console cable. I don't want it to have an IP address. Will this affect the data it passes?

Not at all.

Traditional switches operate at layer 2 and how data passes through them and how they forward frames is not impacted at all by whether the switch has an IP address or not. Not having an IP address on the switch will mean that you can not access the switch remotely. It also means that the switch can not send syslog messages to a server, can not respond to SNMP querries and not send SNMP traps., could not use NTP to learn correct time. If you do not care about any of those things, then you can say that it has no impact.
