I have a point to point wan with 3 sites.
I have to now join the two remote sites together.
Kindof like a partial mesh. Would the best option
be point to point for all sub interfaces?

Yes, Frame Relay. So hub and spoke. Point to Point
interfaces from remote sites to my central.
Also point to point interface from remote site to remote site incase of failure.
