If you only have 2 switches in a stack, do you have to cross the cables? Unfortunately I have an immovable fiber patch panel between my 2 switches, the stack cables will reach port-to-port, but they are not going to make it criss-crossed. I get the gist of the criss-cross with 3 or more switches; but is it required?

What is the output of "sh switch stack-ring speed"?
As long as the output shows:
Stack Ring Speed : 480G
Stack Ring Configuration: Full
Stack Ring Protocol : StackWise
you should be fine.

I have not connected them yet, wanted to get this answered first, these switches are in production. I think I will give it a shot then, after hrs tonight. I'm thinking worse case I will only have a half-ring if it doesn't work that way?

Correct. Worse case would be half-ring, but I think you should be fine.
