The most recent Webex Meetings update to 42.12.5.13 has added an option for Host and attendees to change their name. We use Directory Synch which disabled this feature for all attendees (host and attendees) and only users joining from outside the organization or via PSTN had the ability to edit their name.
The latest update is now an all or nothing scenario and no longer prevents Directory Synch added accounts from modifying their name. This has caused problems in our K12 School District. Students are changing their name to the teacher and initiating chats with other attendees as if they are the teacher.

I did disable this on our CH site but now Hosts can't edit names of attendees that join from outside the organization or via PSTN. We've used this feature in the past and it was already configured so Hosts could change names of anyone in their meeting that did not have an AD account.

Have you disabled the ability in WCH? (We did as we are in a similar boat, but with student body a few years older....
Services -> Meeting -> Settings (not under a site - wish the setting was on a per-site basis)
