Does  Remote leaf uplinks supports 1GE GLC-T modules?

You'd have to ensure the uplink ports of the platform support a 1G GLC adapter.

My question was regarding the type of the remote leaf uplinks interface type

I have seen that document. I was a bit confused by the paragraph "1G or 10G connectivity from remote leaf switches to upstream Router" where it seems that only optical SFPs are supported as remote leaf uplinks.

So, the Remote leaf upstream links could also be electrical (RJ45) 1GE ?

As mentioned above, as long as the platform supports it, no issues.  You didn't mention the switch platform, so can't confirm without that info.
