Could you please explain the difference between conc-connections, proxy-connections, connection-rate and ssl-connections rate values on 'show resource usage' output.

My understanding is
Concurrent Connections (Max 4M/Ace module) : Concurrent Layer 4 (through the box traffic) connections.
Proxy Connections : Concurrent Layer 7 connections (Where ACE act as proxy for servers)
Connection Rate (Max 348K/sec): rate at which new connection are made per second
SSL-Connection rate: counter for SSL Transactions Per Second. Its maximum value depends on the license installed.

Does SSL-Connection rate includes one connection to mean - user accessing https for the first time, or every click to a web page over https during a user session.

Its SSL handshakes not the encrypted traffic.
