First option: I suggest to open a TAC case so they can review on detailed.
You can also try the following:
1- reload the WAE device ( either the one at the core or the remote office)
2- if nothing changes stop here and please open a TAC case
3- if the HTTP issue improve, you might be hitting bug CSCud13729 ( at my best guess!!)
4- upgrade to latest release or 5.2.

in regards the chart optimized traffic being higher than original it could just you reading the average vs current traffic or may be WAAS is adding more overhead than the actual orginal traffic.. that would be a good question for TAC to analyze further as well.
