Have you started your own Project Squared room yet?  What are you collaborating on in the room?

Started my Own room that was very easy and straight forward.

Once I have a room built how do I add more people to it. I just added a coworker at the start as a test. But now we want to bring in more people. I see no option to do this.

Once you create a 1:1 room that room is forever a 1:1 room, as we want to maintain the privacy and integrity of the room and communication.  If you want to add a room with other folks follow the same process but add all the participants first then create the room.  Once you have added a room of 3 or more people you can add or leave the room as desired, and all the history of the room remains for those added.
