This is an update from myself, I realize that the INFO message change I want to make is in the message body, not the header, and do not know if there are any supported changes to that in Cisco CUBE, I am also not real familiar with the sip profile syntax. Here is what I have done that does not work.
voice class sip-profiles 10
request INVITE sip-header Content-Type modify "Signal=11" "Signal=#"
request INVITE sip-header Content-Type modify "Signal=11" "Signal=#"
request INFO sip-header Content-Type modify "Signal=11" "Signal=#"
request INFO sip-header Content-Disposition modify "Signal=11" "Signal=#"
request INFO sdp-header Session-Info modify "Signal=11" "Signal=#"
